Dark Chocolate eggnog truffles
(Yields approx. 50 truffles)

Ingredients

3/4 cup Prairie Farms Eggnog
4 tbsp. Unsalted Butter
1 1/2 tbsp. Orange Blossom Honey
8.5 oz. Dark Chocolate Couverture (65%)
4 oz. Dark Chocolate Couverture (65%)
1 cup Cocoa Powder, sifted

1. Add orange blossom honey and 8.5 oz of the dark chocolate couverture to a large mixing bowl
2. Place the eggnog and butter in a small saucepan over medium-high heat and bring it to a simmer
3. Once simmering, pour the hot eggnog and butter mixture over the chocolate and honey mixture
4. Let the mixture rest for 5 minutes to soften the chocolate, then whisk until the mixture is smooth and free of any lumps
5. Cover the ganache in cling wrap, making sure that the cling wrap is pressed tightly against the surface of the ganache, and let it set at room temperature for around 8 hours until firm enough to pipe
6. Once the mixture has thickened, add the ganache to a piping bag with a round tip and pipe 1/2 ounce domes (1/2 inch in diameter)
7. Cover the piped ganache and let it sit overnight at room temperature
8. Pour cocoa powder into a bowl and melt the remaining 4 ounces of dark chocolate couverture slowly in a double boiler
9. With a fork, dip the truffles into the melted chocolate and place them into the bowl of cocoa powder
10. Roll the truffles in the cocoa powder to coat and shake off any excess
11. Enjoy!
